Ingredients homemade vegetable soup
1 large potatoe skin on + diced
2 large carrots peeled + diced
150 grams mushrooms diced
1/2 medium swede peeled + diced
1 large onion sliced
2 pints veg stock
1 tbsp mixed herbs
1 salt + pepper to taste
3 tbsp veg oil
2 tbsp flour
how to make homemade vegetable soup
put all vegetables in a pan.
fry for 5 mins.
add flour + herbs, mix well.
add stock slowly, a bit at a time, mixing as you go along.
simmer for 20-30mins, stirring frequently so it doesnt burn.
reduce heat to minimum and cook for a further 30mins until all veg are soft.
serve as it is or blend for a smooth soup.
perfect with fresh, crusty bread
