Ingredients ochro rice
2 pigtails cut into 1 inch pieces
1 1/2 cup brown rice
3/4 can coconut milk
5 ochros sliced horizontally (fine)
1 diced carrot
3 tomatoes
5 pimentos
4 clove garlic
1 celery stalk
1 chive
1 pinch black pepper
7 cup water
1/4 tsp cayenne pepper
how to make ochro rice
Boil pigtails in a pot of water for approx. 20 minutes.
Blend together celery, chive, garlic and 2 pimentos in a cup of water.
After pigtails have finished remove from pot.
Using a non stick pot combine all the ingredients and cook on a medium fire until desired rice texture is achieved.
Cayenne pepper and additional salt may be added if desired
