vidalia onion and rice casserole

Ingredients vidalia onion and rice casserole


2 tbsp butter
1 medium Vidalia onion
1 pinch cayenne pepper
1 cup milk
2 eggs
2 cup extra sharp cheddar cheese shredded plus more for top
4 cup cooked rice
1 tsp fresh thyme chopped
1 tsp basil chopped
1 tsp fresh parsley choppef
1 salt & freshly ground pepper to taste
1 packages spinach thawed drained

how to make vidalia onion and rice casserole


Preheat oven to 350°F. Butter a large casserole dish.


In a large pan over medium/high heat, saute onions with 2 tablespoons butter and cayenne until translucent.


Add spinach and cook for 3 minutes. Set aside.


In a large bowl, whisk together milk and eggs. Add the cheese, rice, parsley, thyme, basil and spinach mixture. Combine well and season with salt and pepper.
