Ingredients chicken casserole


2 large chicken breasts
2 boxes stuffing
3/4 cup chopped broccoli florets
1/2 cup diced carrots
1/4 cup sour cream
1 can cream of broccoli soup (10.5 oz)
1 can cream of mushroom soup (10.5 oz)
1 cup shredded cheese (we usually use cheddar)

how to make chicken casserole


Preheat the oven to 350°F. Season the chicken to your liking and bake for about 20-25 minutes, or until just done. Set chicken aside until cool enough to handle, about 5 minutes. Don't turn the oven off.


While chicken is in the oven, begin to cook the vegetables (either steam or boil) until they are tender (about 7-10 minutes). Set veggies aside.


Prepare the boxes of stuffing according to the package directions. Set aside.


Once the chicken has cooled enough to handle, shred it. Place the shredded chicken, veggies, sour cream, both soups and about half the amount of cheese into a large mixing bowl. Toss everything together.


In a 9x13 baking dish lined with foil, spread about half of the stuffing. Top that with the mixture from the bowl. Top the chicken mixture with the remaining stuffing. Top the stuffing with the remaining cheese.


Place baking pan in the oven, uncovered, for about 15 minutes. Serve immediately. Refrigerate any leftovers.
